Rayne Rules the Roost !

Literally, this little ball of energy rules our roost indeed ! She is spoiled rotten and deserves every bit of our love. We brought her home on August 25th and ever since then we have been so entertained by this pup ! Over the past month we have learned so much about her personality and have adapted our lives to her. Weekends were rough at first, waking up at 7am to take her out, but its gotten a lot more laxed since she can sleep in with us till 10:30, what a difference! A new tradition we have made is taking her on a 3 mile walk/jog every weekend on a nearby trail. And it is absolutely beautiful there. It is like walking in a forest and the on your side is a creek that runs along the trail path, absolutely serene. After this walk, she is so exhausted that she crashes for the rest of the day. It is awesome! Her breeds she is mixed with are very high energy dogs that need lots of exercise, so these walks really do help wear her out. Enough typing, here are some pics of her from the past month, which include an adorable raincoat I bought her for $2 from TJ Maxx! Also, here is the hillarious video of Rayne getting stuck inbetween two trees on our hike! Funny because she is very smart adn got herself un-tangled pretty quickly! Smart puppy :)

Steak Fajitas

This meal was a first for us! Never have we cooked steak fajitas. A few weeks ago we went to the farmer's market here and got some really great food. We decided to make steak fajitas based on the spicy peppers we got (in the picture to the right). But we forgot what they were called :( . We also bought our meat from a local farmer as well. And boy did we have one heck of a time trying to cut the huge piece of meat. We got two meals out of the meat, so that was great too!

A great last minute side we had was pinto beans. I am a newbie to pinto beans, so Im still getting used to seasoning and serving them. This time, I put them in a pan and added dried red peppers while they heated. A great savory spice to add ! And it was pretty successful in the taste test!

Another side we had is steamed corn. This has been a favorite to cook in our household and we usually try to incorporate corn on the cob in in our weekly dinners. And its so easy to cook, just layer the bottom of the pot with water, butter, and seasoning of choice. Close the lid and let it sit for 15 minutes. And it is ready to serve.

And dinner is served ! Our first time cooking steak fajitas was such a success in case you can't tell. Definitely incorporate it into your dinners if you have never had it. Plus, it's always fun trying new things, especially when your doing it with your loved ones!

Tonight, we had little time to prepare for dinner, so we made something quick, but still so tasty! We used to eat hamburgers with fries, but corn is such a healthier choice. I steam it in the steamer, and add butter and Tony Chachere's to make it spicy. The buns are french bread buns, and the top of the buns were glazed in butter to make it tastier. My favorite part of making hamburgers is toasting the buns and melting shredded cheese on top of the burger while still on the grill. I think it is the little things that keep traditional hamburger meals still so great tasting. 
In the picture to the left, you can see the glazed butter. It was so yummy!

This has got to be one of my favorite meals I have prepared. It was so simple too. Here are the ingredients! 

2 Chicken Breasts
10 oz of Chopped Spinach (packaged kind)
1 cup of Mozzarella cheese blocks cut in thin strips

All you do is stuff the chicken with spinach and mozzarella cheese ! I drizzled some Italian seasoning on top and then put them in the oven at 350 degrees for 25 minutes. The sides I chose are cheese filled Tortellini with tomato sauce on top & a ceaser salad !

Funny, the past few months I have been so lazy with my hair that I have been just throwing it up into a high bun hoping it looked okay. I stumbled across this cute photo of a girl with a similar hairstyle that I have been doing. It really made me feel tickled to see how adorable the look is. I will have to modify mine a bit to get the look. And secondly, I don't what it is but I wore my high waisted pants with a belt, similar to hers as well. Mine were navy. I always get excited when I see that I am following fashion trends when I don't even try or plan to. Now... If I could just find those sunglasses she has, then I think the outfit would be complete. 

This next photo, I absolutely adore. For a second, I just wish it were Spring again so i could wear something like this. I often feel my fashion sense changing more than ever now than I have when I was in my teens. It seems as if I am changing my style to a more mature look and I don't even realize it. Which is not a bad thing, I just find myself dressing older than I am at times. Sometimes I forget that I am still so youthful, and that I need to take advantage of wearing "younger things" while I can.

While looking at new fall fashions I came across an amazing website, that I am now in love with. It's called Asos ! I could sit on this website all day and just adore their clothing, accessories, and shoes! I hope to have introduced the website to some who hadn't heard of it yet!

This is what I mean't when I said I sometimes pick out things to wear that are not my age. There are so many life changes that I am going through at the moment, and sadly, keeping up with fashion trends has not been a priority. I think I have this mentality where I pick out something really cute, that I have and then I try it on and think to myself that I am "overdressed" or "too trendy" so maybe I should just take more risks.

So there are my random thoughts of the day! 

Dreaming a Little

Can't help to dream every now and then. And today, it was all about dreaming about living on the east coast one day. My dream would be to live on Nantucket island. But, I don't think I could live there when winter came. For a long time, I have always wanted to live on James Island, an island off of Charleston in SC. Plus, one of my dearest friends Chelsea would only be a short drive away. A lady I used to work with told me the most descriptive stories of James Island, and how she would wake up in the morning and walk out to the pier and watch the dolphins at sunrise. After that, I was so intrigued by the island. So, in my day dreaming I found some really pretty pictures & imagined my dream  home. Maybe one day my dreams will come true, but for now I just have fun thinking about it.
This would be where we would eat breakfast on a Sunday morning, have wine nights with friends,  & reunions with our family.

Oh these paddles, such a cute idea! I would have to do that somewhere.

This is where I would ride my bicycle and go sit by the ocean and read, write, & photograph the beautiful ocean. And for the leisure ride, I will bring Rayne along with me to ride in the basket .

We Love our family & friends, so this would be a dream to have a guest hideaway like this!

Beef Tacos

Beef tacos are my husband and I's favorite dinner to cook. We are obsessed with Mexican food and honestly eat it too much! But I want to share my secret taco recipe with y'all! It is so quick and does not require much time or  preparation, yet it is so good! This is the perfect meal if you are in a hurry or have lots to do at night and need a quick yummy dinner. Don't ask me how healthy or unhealthy it is.. because this meal is based on the taste test only!

Ingredients are so simple! 

1 package of 93/7 lean ground ground meat (spend the extra dollar on the better quality) 
1 package of McCormick taco seasoning
1 package of Knorr taco rice
1 bag of steam-able corn
Tony Chachere's seasoning to add onto corn 

  1. Open rice bag and boil water until it comes to a boil, then add rice
  2. Place ground meat in a pan and cook on medium heat. Slow cooking is better for texture
  3. Rice will cook for about 10 minutes, do not open lid on pot. Rice cooks by steam. 
  4. After meat is browned, simmer the heat, and add 3/4 cup of water then drizzle taco seasoning. 
  5. Mix in seasoning evenly and then cover pan with aluminum foil or pot lid and let it sit for at least 10 minutes. 
  6. Then prepare taco shells or tortillas. Soak paper towels in water and add them inbetween each tortilla to soften them. Place in microwave for about 30-45 seconds. 
  7. Place corn in microwave for 4-5mins 
  8. Add cilantro to ground meat to add a little something extra.

Rice is ready after 10 minutes
